Peach muffins

Ingredients 

250 g self raising flour
1 tsp baking powder
125 g golden caster sugar
2 eggs
90 ml sunflower oil
250g soya alternative to plain yogurt
1 large peach, stoned or 1 large tinned peach, cut into 1cm pieces

Preparation 

Pre heat the oven to 200۫C/fan 180۫C/gas 6.

Line a muffin tin with muffin paper cases. Sift the flour and baking powder into a bowl then add the sugar.

Break the eggs into another bowl and add the oil, soya yogurt and almond essence , then poor into the flour mixture. Using a metal spoon, stir together without over mixing. Fold in the peach pieces.

Spoon the mixture into the muffin cases and bake for 15-18 mins.

Cool on a rack. Serve warm
